Pheasant in Wine
Sauce
lightly bread Pheasant pieces with Fry Magic,
in fry pan, melt approximatly 1/4 C. butter
when grease is good and hot, place pheasant pieces in pan and brown to
golden brown. Add, chopped onions, celery, and 1 small can of mushroom
pieces and stems.....let cook only untill the veggies
get somewhat
tender......pour in approximatly 1 Cup of your favorite wine.....I like
to use a Pink Chablis......I don't use cooking wine, I use what we drink
with the meal......let simmer for approximatly 5 mins......add 1-1 1/2
cups of sour cream, and let simmer for another 5 mins......this makes a
nice gravy......when sauce is good and hot.......serve! I like to serve
it over a rice pilaf .... very tasty!!!

Here is a tasty Pheasant recipe that my
good friend Val gave me.....
BBQ Pheasant....
Equal parts Pepsi and Catsup......season with pepper, salt, alittle
onion powder, alittle garlic powder, then add chopped onions, celery,
and green pepper if you like.......
Brown off Pheasant as in above recipe......place in crock pot.....pour
on BBQ mixture....turn on low and walk away for the day!!!!!
This is very good and real easy!

Goose chizlic
Using the breast cut into strips......or bite size pieces
Drop raw meat into hot grease and quik fry.....this only takes a couple
min.s so watch it close........
Take out and sprinkle immediatly with seasonings.....
I use a mixture of Salt, pepper, garlic and onion powder, seasoning
salt, and crushed red pepper.......
This is really good to have when you want something to go with that Beer
just before dinner......
This works very well with most any meat!

Walleye with a bite.....
Soak fillets in milk for at least an hour......
Place fillets on a baking sheet....smear butter over the tops of your
fillets. Pour 1 can of Stewed Tomatoes w/sauce over the top of your
fillets.......now slice onion and green pepper over the top of
that.....then pour a can of mushroom stems and pieces over the top of
that......sprinkle with pepper, I use a mixture of seasonings that I
get from Arizona on this.......called southwest seasoning.......but it
is really only garlic salt, pepper, curshed red pepper.....so when out
of the seasoning that is what I use........
place in the oven at 350 degrees for about twenty mins. check to make
sure fish is done......may take alittle longer, but generally don't take
to long.......
ENJOY!!!!!!!!

Lemon Pepper Walleye.......
do the same as above......but instead of the tomato sauce and
things.....sprinkle with lemon pepper, add onions, and mushrooms, then
cover with real lemon slices........mmmmmmmmmmmmmmmmm real good! Bake
as above as well........

Another good recipe from my good friend Val is her fish spread.....
Walleye Spread
1 pint jar of canned walleye
1 philly cream cheese softened
mix together and cut in some fine bits of onion
season with your favorites.....salt, pepper, a dash of garlic, and I use
a dash of lemon juice......also like to cut some black olives into mine
and stir in alittle grated cheese for a varience......
Get out the cracker box and eat away!!!!!
Another good one to have with that Ice Cold Beer!!!

Rice Pilaf
Cut up a two pound package of bacon into bite size pieces.....brown in
electric fry pan.......when good and browned, chop in onions, and
celery.....let cook to tender......add about a teaspoon or so of chicken
base......also a small amount of crushed garlic.....alittle black
pepper....now, add seasoning packet....let the rice
fry in the bacon grease.....till it gets puffy, then add about half a
pound of very fine egg noodles......let fry alittle as well........
cover with water, and let boil till most of the water is absorbed, then
turn down to simmer.......you may need to add water if your rice does
not seem done.....this is an excellent dish with all wild game....or
fish......sorry folks, I am used to cooking for large groups.....
